Osmotolerant Yeasts and Xerotolerant Moulds in White Sugar by Membrane Filtration or Pour Plating

1 Scope and Field of Application

This method is used for the enumeration of osmotolerant yeasts and xerotolerant moulds in refined sugar products. Membrane filtration should be used for water soluble products that will contain low levels of microorganisms. Pour plate method is restricted to products that cannot be dissolved in water or products that are dark coloured, which can be difficult to filter.
